Dodici Lune brut rosé: Col Vetoraz summer's must

What to drink in summertime? the answer of our cellar for summer tastings is in the sign of harmony and elegance and it's called Dodici Lune brut Rosé, a sparkling wine obtained from SouthTyrol Pinot Noir grapes vinified in pink.

A perfect solution for this season when normally people demand some fresh, delicious but elegant and cool wines. The Dodici Lune brut Rosé is born out of a gentle process, in which passion and strictness are needed: in the spring of the year following the grape harvest, the foam is taken and within 60 days take place the fermentation at a temperature of 13-13.5 degrees. Once the fermentation is completed, the wine is brought into contact with its yeasts, which normally remain on the bottom, for 12 moons (the so-called long charmat method) at 10-11 degrees, to allow the refinement and to preserve its elegance. It is thus obtained a salmon pink coloured Pinot Noir which, despite the long maturation of yeasts, maintains an aromatic fragrance that is still traced back to the fruit, with a thin and persistent perlage, creamy foam and an elegant and harmonious bouquet. In the mouth it is dry, harmonious and of good length, and its scents reminds the underwood fruits and the ripe yeast.

"To achieve this," said the oenologist Loris Dall'Acqua, "we have done several tests but in the end we have set ourselves at 12, the most appropriate number to enhance the elegance of this wine, alos an ideal time indicator for its maturation."

Excellent as an aperitif, it is the perfect wine for starters of raw fish, or for a seafood risotto, or with redfish with cherry tomatoes and taggiasche olives, but it also fits well with baccalà fish because it perfectly weights the typical fattiness cleaning the mouth and leaving a feeling of harmony. It can also accompany excellently some strong character fish such as carpaccio or celery.
