Made from Pinot Noir grapes vinified in pink, the Twelve Moons brut Ros\u00e9 is born in the spring season of the year following the harvest, when frothing and fermentation over 60 days takes place, at a temperature of 13-14 degrees. Once fermentation is complete, the wine is placed in contact with its own yeasts for 12 moons (long charmat method), hence the name, at a temperature of 10-11 degrees, which favours ageing and preserves its elegance.<\/p>\n
The result is a salmon-coloured Pinot Noir Ros\u00e9, which despite its long maturation on the lees retains an aromatic fragrance traceable to the fruit, a fine and persistent perlage, creamy mousse and elegant and harmonious bouquet. On the palate it is dry, of good length and its aromas are reminiscent of berries and ripe yeast.<\/p>\n
Excellent as an aperitif, it is the ideal companion for raw fish hors d’oeuvres, or seafood risottos, but it also goes well with more substantial fish such as baked cod because it balances its typical fatness by cleansing the mouth and leaving a feeling of harmony.
