Christmas season this year will undoubtedly assume different tones, but this won’t be without excellence, to celebrate the value and strength of the family: this is Col Vetoraz promise for Christmas 2020. A tradition which this year will not be as sparkling as usual, but will anyway aim to bring, at least for a few days, a hint of serenity to Italian families. On the tables, this year dressed with a more intimate atmosphere, the bubbles of Valdobbiadene DOCG’s wines will express their usual excellence. This time has taught us to be more aware of the family core values, the nucleus from which everything starts and celebrating them with the excellence of Col Vetoraz will make our Christmas a truly Superior holiday. The three labels that we suggest, in combination with the holiday dishes, are: Valdobbiadene DOCG Cuvée 5 extra brut and Valdobbiadene DOCG Cuvée 13 extra dry, 2020 two new entries, together with Valdobbiadene DOCG Millesimato dry. Valdobbiadene DOCG Cuvée 5 extra brut stands out for its residual sugar content but despite this it maintain a round expression. Perfect with appetizers such as burrata and caviar mousse or a raw crustacean, it goes perfectly with both the salty notes of the first and the sweet nuances of the second. Valdobbiadene DOCG Cuvée 13 extra dry, performing in first courses such as cappelletti in broth or risotto with sea bass. Traditional dishes with a gentle taste that goes well with the slightly soft and at the same time dry delicacy of this wine. Finally, the Valdobbiadene DOCG Millesimato dry with its unmistakable thin perlage is persuasive, elegant and complex, with an inviting citrus vein that clearly defines the nose, followed by white peach, pear, white flowers and aromatic herbs to confirm its typicality. The creamy carbonic and the marked freshness are in perfect balance with the sweetness of the sugars and the persistence in the mouth is perfect. It is a sparkling wine perfect to end a meal for the final toast or to accompany the panettone in its traditional recipe.
