When the vine rests and the cellar is silent, the vineyard is dynamic. In wintertime, in fact, we do not lose the rhythm, in a continuous balance between waiting and activity<7b>. An only apparently labouriosness in contrast with the rest of the plants and the silence of the cellar, where the wine of the last harvest rests on its noble lees, a necessary pause to enrich itself in aromas and structure.
